For years I've made homemade tartar sauce using regular dill relish. Then one day I could not find any at my daughters home and it was too late to go to the store. What to do? look around and improvise...
As I'm searching through her refrigerator for any kind of pickle, I come across a jar of "pickled okra"? Okay never seen that before, though I have used okra in a lot of dishes, so what the heck. I sample one of the pieces and well it will work just fine.
I made the tartar sauce as I usually do (only using pickled okra) and served it with dinner without telling anyone. Low and behold everyone liked the tartar sauce, in fact they thought it was great with the fish.

Poppy's Southern Pickled Okra Tartar Sauce
INGREDIENTS
1/2 cup premium mayonnaise (Duke's or Kraft Home Style etc.)
4-6 pieces of pickled okra
1/4 tsp (+/-) garlic powder
1/8 tsp (+/-) Old Bay Seasoning
1/8 tsp (+/-) soy sauce
ground black pepper (to taste)
DESCRIPTION
Poppy's Southern Pickled Okra Tartar Sauce
This original and easy to make southern style pickled okra tartar sauce is a unique addition to your favorite fish, especially fried fish. The layers of flavors will enhance your fish in a different way than regular store bought tartar sauce does.
DIRECTIONS
Finely chop pickled okra, do not remove seeds.
In a mixing bowl combine all ingredients and mix with a fork thoroughly.
Cover tightly and refrigerate at least an hour to blend flavors. Storing overnight (in fridge) is even better before serving.
Serve with your favorite fish that you use tartar sauce with.
NOTES
Do not use to much soy sauce, only enough to enhance the flavor and color.
Easy to double or triple ingredients of this recipe if more servings are needed.
Will last in refrigerator for 2-5 days.
